Gratinirane LCHF palačinke s skuto

Palačinke pri LCHF/KETO prehrani predstavljajo poseben izziv. Težko si predstavljamo, kako narediti palačinke, ki bi bile tanke in okusne kot prave palačinke z moko. In da bi se še lepo spekle in obračale. Ampak, tudi palačinke brez moke se da narediti popolnoma enostavno. Lahko jih namažemo s spasiranim jagodičevjem, ali pa sami skuhamo marmelado iz jagodičevja in z dodanim eritritolom. Načinov za uporabo palačink je mnogo. Spodaj je recept za gratinirane palačinke s skutino kremo.

Razmerje v receptu je ustrezno tudi za LCHF/KETO prehranjevanje.

Moj nasvet za uspešno peko palačink: za peko ene palačinke uporabi 1 žličko kokosovega olja, peci na srednji moči in počakaj da se spodnja stran lepo zapeče, nato počasi in previdno obrni palačinko. Na uspešno peko LCHF palačink vpliva tudi pravilna izbira ponve. Po mojih izkušnjah se najbolje obnese ponev za palačinke s čim nižjim robom.

SESTAVINE za palačinke (za 8 palačink):

  • 7 jajc
  • 200 g sirnega namaza
  • pol čajne žličke vinskega kamna
  • malo soli
  • cimet in vanilija (po želji)
  • 1 čajna žlička mletega indijskega trpotca 

Sestavine za skutino kremo:

Sestavine za vrhnjo plast:

  • skutina krema, ki ostane od namazanih palačink
  • 2 jajci
  • mandlji, narezani na lističe (po želji)

Ostalo: 30 g kokosovega olja ali BIO Ghee masla za peko palačink (1 žlička na palačinko)

Najprej se lotimo peke palačink. Vse navedene sestavine (razen mletega trpotca) za palačinke zmešamo z mikserjem in na koncu dodamo žličko mletega trpotca. Maso pripravimo tik pred peko palačink, ni potrebe po počivanju. Segrejemo žličko kokosovega olja ali BIO Ghee masla v ponvi in vlijemo maso za palačinke ter jo lepo na tanko porazdelimo po ponvi. Pečemo na srednjem ognju in počakamo da masa v ponvi ni več tekoča, da se lepo poveže, šele nato lepo počasi obrnemo palačinko. Za vsako palačinko pred peko dodamo 1 žličko kokosovega olja ali BIO Ghee masla. Če se nam zdi da je masa preredka, lahko dodamo še malenkost mletega trpotca. Če se nam zdi pregosta pa jo lahko razredčimo z minimalno sladke smetane.

Ko spečemo vse palačinke pripravimo skutino kremo. Zmešamo vse navedene sestavine in namažemo palačinke. Približno 1/3 skutine kreme pustimo za preliv. Namazane palačinke polagamo v pekač.

Segrejemo pečico na 170 stopinj. 

Skutini masi, ki nam je ostala od palačink dodamo še 2 jajci, po želji lahko tudi dodatno žlico eritritola s stevijo, zmešamo in polijemo po palačinkah v pekaču. Lahko dodamo tudi narezane mandlje ali orehe. 

Pečemo pri 170 stopinjah približno 35-40 minut, oziroma dokler se zgornja plast ne zapeče na zlato rjavo.
